Cream Cheese Mints

Beaman Family, Dessert, No Bake

Ingredients

1 8 oz package cream cheese at room temp.

1/8 t. oil of peppermint

1 2/3 c. confectioners sugar

food coloring as desired

Directions

Mash the cheese and add oil of peppermint and coloring.
Mix in the sugar and knead with hands until it is similar to pie dough.
Roll into balls the size of marbles.
Place on side in small amount of granulated sugar.
Press sugar side down into rubber mint mold and remove immediately.

Notes

Jean always used oil of peppermint, which she purchased at the drug store, rather than peppermint extract. She said the flavor was both stronger and clearer. Her grandsons Aaron and Ike remember making these mints with her and wanted to be sure this recipe was included in the cookbook.

2024-11-28 Tried recipe with 8 oz cream cheese, 1/8 tsp oil of spearmint and 1 2/3 c confectioners sugar, result was more like a loose batter than pie dough. Tried refrigerating, stayed loose. Confirmed recipe matches family cookbooks. Found other recipes with much more sugar to cream cheese, like (3 oz cream cheese, 1/2 tsp peppermint extract, 3 cups powdered sugar).
